Enchiladas Suizas

Swiss Enchiladas
Prep-10 minutes Cook-30 minutes



This recipe is very popular in Mexico and super delicious! As much as I searched, I couldn’t find the recipe in English so this recipe is a translation from Spanish into English of a delicious version with my own twist! This is so good and I usually don’t like traditional Mexican food.

Ingredients:

1/2-1 cup of Green Salsa (as desired)
1 chopped White Onion
2 small garlic chopped Garlic cloves
1-2 chopped  JalapeƱo’s (optional)
1 package of Cream Cheese
Optional – Cilantro

Corn Tortillas (Flour if desired)
Vegetable Oil
1 ½ cup of cooked Shredded Chicken

Manchego Cheese to top  (mozzarella and asiago are great substitutes)

Directions:

Cook Chicken set to the side. Once cool Shred.

In a skillet with oil heat onion, garlic and jalapenos. When Vegetables are cooked add cream cheese. *You can add the green salsa to the mixture but it may burn off. I prefer to add the green salsa once mixture is in the tortilla.

Heat Tortillas. You can do this by either cooking them one by one on the stove with a little oil in a skillet (heat until warm and pliable but not cooked) or wrapping them in paper towel and heating them in the microwave for 15 seconds  at a time!

Distribute chicken and mixture evenly in pan inside warmed tortillas. Add green salsa to top of mixture and roll tortillas.

Put green salsa on top of tortillas and manchego cheese.

Broil enchiladas until cheese is golden.

Martha Stewart Braised Spring Vegetables



Step-By-Step Guide to Perfect Braised Veggies
*These veggies are delicious and pair amazingly with roasted Chicken!


Ingredients Serves 4

1 Tbsp Olive Oil
1 bunch of Spring Onions (or scallions) cut in half (if large quarter)
Sea Salt for seasoning
2 Tbsp Butter
1 ½ to 2 Cups of Chicken Stock
½ Carton of Whole Mushrooms (Morels work great as well)
12 Ounces of Sm Potatoes cut lengthways and then into quarters
1 Tsp of Thyme

Directions

Prepare Spring Onions and add salt to side that is cut. Cut up Potatoes and set to the side.

Heat Olive Oil in a large skillet. Add Spring Onions face down on the skillet. Let cook for 5 minutes until face is caramelized.

Turn over onions and add butter cut into smaller pieces to distribute more evenly and help speed the process of the butter melting in the pan. Once butter has dissolved, add Chicken Stock. Let come to a boil.

Once the stock starts to boil, add Whole Mushrooms and Potatoes.

Cover and Reduce heat to a simmer. Let Vegetables cook for 13 to 15 minutes allowing potatoes to tenderize. Check periodically using a fork to pierce potatoes to see if they are soft, if mixture becomes to dry add more stock.

When vegetables are tender remove cover and turn the heat back up to let mixture boil until stock turns into syrup. Season vegetables with more salt if desired. Add Thyme & Serv

Buttermilk Substitute


I often find myself looking for substitutes to recipes when I cant find the ingredients I need. Even more often, I struggle to find the ingredients at grocery stores. Sometimes, I think its because grocery stores in Mexico don't have all the ingredients I need and other times I think it's because Spanish is a 2nd language to me (and I cant always read what the product is)....

On my latest quest to find cake ingredients, I went looking for "buttermilk" to no avail. I could find 10 different creams and 100s of milk products but no buttermilk. So alas, I went to google hoping I could find a substitute. Surprisingly, I found there is an easy substitute. Great to use anytime you find yourself in a bind and without buttermilk for a recipe.... Good Luck

So here is the recipe for you in case you ever find yourself in a bind and need buttermilk but don't want to race back to the grocery store this holiday season.... Good Luck

Ingredients
1 cup of Milk
1 Tablespoon of Lemon Juice or White Vinegar

Recipe

In a clear liquid measuring cup, pour 1 Tablespoon of Lemon Juice or White Vinegar.
Pour Milk to the 1 Cup marker and mix.
Add to recipe!!!!

Garlic Shrimp Pasta




This recipe is SO Easy and so delicious. Even if cooking isnt your thing, you will love making this recipe and so will everyone in your family.


Ingredients

1/2 a package of Spaghetti (Whole Wheat Preffered)
1/4-1/2 a cup of peeled and washed Shrimp (Brown Crudo Shrimp prefered) (200 grams)
1/2 a cup of butter (50 grams)
1 lemon
1 Tablespoon of Olive oil
3 cloves of chopped garlic
1/4 a cup of Chopped onions
1 Teaspoon of Chili flakes
Parsley (to Garnish)
Mozzarella (to Garnish)


Directions

Noodles
-In a pan, boil 4 cups of water. Add a pinch of salt and noodles (5-10 minutes or until noodles are soft).
-Drain and set to the side

Sauce
-While noodles are cooking. Heat butter in a frying pan. Add Olive Oil, so the butter doesn't burn and STIR
-Add Onions, Garlic and Chili flakes. Let cook and stir for 2-3 minutes.
-Zest skin lemon over pasta
-Add Shrimp: *Shrimp will turn pink when cook
-Pour pasta into the frying pan. and mix with the sauce. Let cook for a few minutes until mixed thoroughly.
-Cut lemon in half and squeeze half of lemon juice into pasta, stir
-Add Parsley and Mozzarella Cheese as desired
-Serve hot

Lemon Pepper Chicken Tacos





This recipe is fresh, fast and delicious

Ingredients
-1 lb  of Chicken
-2 Tablespoon of Lemon Pepper (add more for stronger taste)
-1/4 Cup Chopped Onions
-1 Teaspoon of Dried Chili Flakes (or 1/2 a freshly chopped Serrano pepper)

Relish/ Items that require no cooking
-Shredded Cheese (Manchego, Gouda or Cheddar)
-Corn or Flour Tortillas

Directions
-Cut chicken into small pieces. Pour 2 tablespoons of lemon pepper over chicken and marinate (The chicken can be cooked immediately or refrigerated for more flavor)
-Heat up fry pan and put 1 tablespoon of vegetable oil in pan.
-Fry onions for 1 minute
-Add Chicken and Fry until golden brown

How to prepare the Tacos
-Wrap Tortillas in paper towel and heat for 20 seconds in the microwave until warm
-Put desired amount of cheese in the middle of the taco then place chicken on top
-Add any other salsa, cilantro or avocado desired!
-Enjoy!
