Swiss Enchiladas

This recipe is very
popular in Mexico and super delicious! As much as I searched, I couldn’t find the recipe in English so this recipe is a translation from Spanish into English of a delicious version with my own twist! This is so good and
I usually don’t like traditional Mexican food.
Ingredients:
1/2-1 cup of Green Salsa (as desired)
1 chopped White Onion
2 small garlic chopped Garlic cloves
1-2 chopped JalapeƱo’s (optional)
1 package of Cream Cheese
Optional – Cilantro
Corn Tortillas (Flour if desired)
Vegetable Oil
1 ½ cup of cooked Shredded Chicken
Manchego Cheese to top (mozzarella and asiago are great substitutes)
Directions:
Cook Chicken set to the side. Once cool Shred.
In a skillet with oil heat onion, garlic and jalapenos. When
Vegetables are cooked add cream cheese. *You can add the green salsa to the
mixture but it may burn off. I prefer to add the green salsa once mixture is in
the tortilla.
Heat Tortillas. You
can do this by either cooking them one by one on the stove with a little oil in
a skillet (heat until warm and pliable but not cooked) or wrapping them in
paper towel and heating them in the microwave for 15 seconds at a time!
Distribute chicken and
mixture evenly in pan inside warmed tortillas. Add green salsa to top of
mixture and roll tortillas.
Put green salsa on top
of tortillas and manchego cheese.
Broil enchiladas until
cheese is golden.
